Lasagna Roll, Mom-style

July 2010

1 lb ground beef, browned with basil, oregano, salt, pepper, and onion powder.
4 lasagna noodles, boiled until tender (run under cold water to stop the cooking process and make them easier to handle)
tomato sauce
Mix:
8oz cottage cheese
1/4 cup parmesan cheese
1/2 cup mozzarella
1TB dry parsley flakes

For once I didn’t bother to use a measuring cup, but those measurements are according to her original lasagna recipe. Like the other recipe, lay the noodles flat, layer with cheese mixture, then meat mixture, then top with your favorite tomato sauce. Roll them up – and they will be incredibly messy – stick ‘em in any snug pan and bake for 30 minutes at 350 degrees. Enjoy!

Smoked Salmon Sandwich

The only real prep that needs to be done is slicing and cooking some tasty red onions. Well, that, and if you don’t own a toaster, which I highly recommend, toasting your bread in the oven like I did.

Olive Oil

Red Onion, sliced

Cream Cheese

Fresh Dill, chopped

Chives, chopped

Cucumber, sliced

Strips of Smoked Salmon, from a packet

Wheat Bread

Sautee the onions until they get soft, turn heat to low and cover them for 20-30 minutes to caramelize. In the meantime toast your slices of bread. Spread a thin layer of cream cheese on each side of the toast, sprinkle generously with chives and dill. Place slices of cucumber on top and layer with strips of salmon. Complete with other side of toast and enjoy!
